Arugula: Our Favorite Spring Green

At Secret Ingredient we love the fresh peppery flavor of arugula. Arugula is an early spring green here in Pennsylvania and is extremely versatile.

Arugula is packed with vitamins C, K and A as well as minerals magnesium, calcium, iron and potassium. Arugula is also known for improving eyesight and strengthening bone health.

Arugula is also a great source of antioxidants and Your immune system will also thank you for choosing arugula, because antioxidants work to bolster your defenses against simple illnesses like the common cold.

Ways to Incorporate Arugula Into Everyday Dishes

At Secret Ingredient we like to use arugula in a variety of ways. Tossed with pasta, tomatoes, olive oil and garlic, a topping for pizza with fresh mozzarella, in an omelet or just a simple arugula salad with lemon and olive oil.  One of our all time favorite spring recipes is Linguine with Tapenade, Tomatoes and Arugula. 

Arugula can also be used to make a delicious pesto with spinach, pistachios, lemon juice, garlic and olive oil.  This pesto can be made in large batches and stored to enhance many dishes.  We love Baked Chicken with Arugula Pesto and Spaghetti Squash, it is healthy and full of flavor.
