What are you going to make for dinner tonight? During the busy days of summer, I prepared a lot of refreshing and stylish salads for my clients. In the fall and winter, it’s not always as easy, as hearty roasted meats and root vegetables tend to take longer to cook. But they’re not any more complicated…

One-pot and one-pan meals solve the everyday dinner conundrum.

Here are the basics:

  • Toss meat and veggies onto one sheet pan or into one pot.
  • Season well and cook until done.
  • Wash one pot or pan.
  • Enjoy a bubble bath with all that extra time!

One-pot and one-pan meals also offer an easy way to add more nutrition to your plate. In addition to protein sources like beans, seafood, and meat, I like to incorporate potatoes, squash, carrots, onions, broccoli, kale…the list goes on. If you have a picky eater at home, this is an especially good way to sneak greens and veggies into their dinners without them even knowing!

One-Pot and One-Pan Meals for Weeknight Success

Baked Sausages with Apples: Take advantage of all those apple-picking trips with this sweet and savory dish. Pork, apples, carrots, and potatoes are seasoned with rosemary and sage for a full-flavored 35-minute meal.

One-Pan Balsamic Chicken Veggie Bake: Broccoli, carrots, mushrooms, and tomatoes round out this winning chicken dinner. Add a bit of balsamic and fresh herbs and cook until done. Serve with a crisp Chardonnay.

Quick Chick and Noodle Soup: Leave it to Rachel Ray to come up with a record-breaking chicken soup recipe (and give it a fun name to boot). Keep your cutting board by the stove so you can chop and cook this soul-pleasing supper in no time.
